That sounds yummy! Being from a Canadian family, roasts were always a sure bet!
I had one of my all-time favorites last night… Stuffed Peppers! Karen makes them the best of all the folks I know, even my sister (don’t tell her!). The first time I had them was in the 70’s, from my sister… her husband‘s mom showed her some of his favorite dishes and stuffed peppers was one of them. An interesting twist was, she’d crumble Ritz crackers in the Hamburg to stretch it…it was actually phenomenal! Karen doesn’t put crackers of any kind in her mixture, and it’s a handed-down recipe from her mom, and are sooooooooo good! Oddly, my favorite part is simple crushed breadcrumbs on top with a pad of butter to make it crisp up…OMG it’s like dessert in the dinner!

My sister still knows how to make it, but I haven’t had any since the early 80’s. theoldwalshfarm.com/chicken-fricot/I had a chicken dish tonight, too…. Chicken Ole! …Karen made it homemade from scratch. Yum! |

Beats me! I’ve had those nights… sadly, staring at a plate and wondering, “…what the Hell is that?”  I had soft four tacos tonight… vegan steak strips, which was actually very good! Been interesting the past couple nights…last night was Shepard’s Pie Pizza! …was awesome, with real Hamburg beef, too! |

Last night was turkey sausage with roasted peppers, onions, carrots, and potato's. I really like that dish…simple but so tasty!

Spaghetti and meatballs, with a salad tonight! One of my all time favorite meals, this once was made with Impossible Meatballs, and I gotta be honest, they were awesome!!! …I really couldn’t tell the difference between these and beef, and, no indigestion from fatty beef. I’ve been eating mostly Vegan, and switching to a whole food - plant based regime, which at its foundation basically takes oil out of the equation. Mainly, an attempt to get my cholesterol down, but other benefits come into play, as well.

Ginger Hoisin Noodles for dindin! Flat noodles with hoisin sauce, combined with grated ginger, soy sauce, sesame oil, chili paste; add in scallions and peanuts, and topped off with sesame seeds. Home made from scratch, the kicker is the peanuts, which are shelled salted peanuts from Five Guy’s burgers… the best peanuts I’ve had outside of Fenway Park!

Last night was Cajun Pasta… rigatoni pasta with green peppers and onions, in a light red sauce spiced with “Slap ‘ya Mama” Cajun seasoning! Really lit up the belly!
Tonight, Mexican take-out of a Vegetarian Burrito…yummy!

Pizza for Super Bowl Sunday from the local pizza shop, good stuff. I always buy a couple of frozen and throw in the chest freezer.
